Chocolate Chip Oatmeal BF Cookies


The boyfriend's sweet tooth gives mine a run for its money.  However, he is quite particular about his beliefs of what a "sweet" actually entails. 

Simple Ways to Easily Ruin a Sweet According to BF: 
- nuts
-dried fruit
- anything involving low fat or reduced calorie

Hmm quite a predicament, I know.  Knowing BF's favorite cookies are Cowboy Cookies, I was determined to follow at least two of his rules, no nuts, no dried fruit. My next goal- make them so scrumptious, he cant even tell they are a healthy option!

Seeking guidance from Gina, I explored my Cowboy Cookie options and... SUCCESS.  These cookies are the most delicious thing I have ever made (which is quite a statement considering my boss came in today and devoured the Ooey Gooey Chocolate Almond Oatmeal Bars raving about what a treat they were)!


Ingredients: 
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
-1/2 teaspoon ground cinnamon
- 2 tablespoons unsalted butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 large egg
- 1/4 cup unsweetened apple sauce
- 1/2 teaspoon vanilla
- 2 cups quick oats
- 1/2 cup chocolate chips
- 1/4 cup white chocolate chips (you can do all 3/4 cup of chocolate chips like Gina, I added some Vanilla for color and a splash of creativity- I would stay clear of butterscotch chips however as they are a VERY strong flavor).

Steps:
1) Preheat the oven to 350 degrees F
2) In one bowl combine flour, baking powder, baking soda, salt, cinnamon and oats
3) In a separate bowl blend butter and sugars with an electric mixer (my Kitchen Aid is my favorite present I have ever received)
4) Add egg, applesauce and vanilla and mix slowly with electric mixer
5) Add the wet mixture to the dry mixture and stir with a spoon
6) Slowly fold in chips evenly. 
7) Break into 24 spoonfulls and place on pam-ed pan. 
8) Bake for 8 to 10 minutes, remove and let cook.
9) Eat one and ask your roommate/parents/bf/neighbor to hide the remaining from you until tomorrow.
